Procedure:


1) In a pressure cooker add Split Yellow Gram, Beans, Carrot, Cabbage/ half cup of Water and leave for 2 whistles.
2) After two whistles switch off the flame.
3) In a pan add Oil.
4) Once it is heated add Cumin Seeds and sauté for few seconds.
5) Add Curry Leaves, Green Chillies and Red Chillies and fry for a minute.
6) Add Onion and Garlic and fry for 2 minutes in medium flame.
7) Now add this to the vegetables and leave in low flame till the Water is reduced.
8) Switch off the flame.
9) Transfer it into a serving bowl.
10) Vegetable Kootu is ready to serve.

VEGETABLE KOOTU

Ingredients:

Beans (chopped) – 10 Nos.
Carrot (chopped) – 1 No.
Cabbage (chopped) – 100 grams
Onion (chopped) – 1 No.
Garlic (chopped) – 6 Nos.
Curry Leaves – 10 Nos.
Green Chillies – 2 No.
Red Chillies – 2 No.
Split Yellow Lentils – 50 grams
Cumin Seeds – 1 teaspoon
Turmeric Powder – ¼ teaspoon
Salt – 2 teaspoons or as per taste
Oil – 3 teaspoons
